what’s for dinner

in the past year or so, i’ve tried to revamp my eating habits. not that they were ever horrible but there was definitely room for improvement. things like switching from white refined carbs to wheat bread, pastas and brown rice. or increasing my veggie and fruit intake. i’ve always been a huge griller and have little to no interest in fried food or sweets so there was no real need to cut out any major bad habits. i admit to little addictions. a hershey’s miniature in the afternoon to give me a chocolate burst of energy. or the occasional indulgence in a big bowl of hagen daaz coffee ice cream ~ or any ice cream really! the biggest place i see for me to cut calories is in wine but what fun would it be to give that up! 😉

but i am faced with one major challenge; a nine-year-old and an ex who thinks fruit snacks count as putting something healthy in our daughter’s lunch box. little by little i’m working to educate them both. he now occasionally serves real fruit and multi-grain has replaced white (in pasta only) ~ baby steps to whole wheat. but sometimes i still feel as though i’m fighting a losing battle. part of the challenge comes from the fact that i am not a cook. i’m not useless in the kitchen but creativity and variation eludes me and i need to discover new, fun HEALTHY ways to appeal to sab’s picky, little girl appetite. so this week we busted out one of the dust-covered cook books on my shelf and i’m hoping that maybe we can pick and make something that achieves a little of what i hope it will. and that we don’t find ourselves having to call for chinese takeout … again.

    i agree on the diet front if i gave up wine would i lose a few pounds-would it be worth it? doubtful! i do love my wine and anyway life is too short to cut out that or the occasional ice cream 🙂 sorry about the ex and the fruit snacks though-i guess it could be worse.

    Again, I’m late.
    I’m finding myself discovering cooking as well. My daughter is a teen and her dad, absolutely let’s her eat whatever she wants when she is with him. So when she is home I try to give her as much home cooked stuff as possible. My issue however isn’t cooking…I like to cook, I just don’t have time. And jeez it’s sooooooo tempting to just pick up something on the way home.

    If I come across anything particularly easy, I’ll let you know.
